What's driving it. Most stores held within a few hundred dollars of last week. The small shortfall came from softer dinner dine-in on rainy days across California, offset by lunch strength inland.

Our stores open 18+ months vs the same window last year · week, October to date and year to date, each labeled
Comp stores are growing on ticket, not traffic this year. Year to date, sales up 2.0%, with transactions down 1.1% and average ticket up 3.1%.
October to date, comp stores are growing on ticket, not traffic: sales up 1.2%, transactions down 1.8%.
We have 10 stores open, but only 8 have been open 18 months or longer. Those 8 are our mature base. Comps compare them to their own results a year ago, so grand-opening bumps and newer stores don't skew the number. Total sales are up +9% vs last year, but most of that comes from new stores. Comps tell us whether the core business underneath is healthy.
We read comps three ways: sales, transactions and average ticket. When sales grow because transactions are up, more people are coming in. Ticket can grow two ways: transactions buying more per order (suggestive selling, POP, the menu), which is what we want to see, or price increases, which can hide a traffic decline if you only look at sales. Until menu-price history is available, ticket growth is reported as ticket growth, not attributed to price.

Shaded = more than 5% up or down vs last year. 5 of 8 stores beat last October to date. Year to date only counts the days a store has been in comps ("Since" = the week it joined); n/c = not comparable. Tempe year to date is adjusted for the months last year when third-party wasn't in Toast.
A data note so everyone reads the comps the same way
Last year's third-party orders are missing from Toast for Tempe (Jan 1, 2025 to Feb 28 and 2025), so year to date compares those stores only on days when both years include third-party: +2.0% like for like, +1.9% raw. From March 2026 on, every comp store has third-party in both years, so weekly and monthly comps need no adjustment.
A store joins comps the first full week (Monday to Sunday) after it has been open 18 months, so we compare settled sales, not the grand-opening bump.
Oakland (week of Nov 9) join by year end, taking the base to 9 stores. Until a store joins, read it on the New stores tab.

What's driving it. Fresno is the one flagged store, down 14.3% on last year and sliding over eight weeks on lost dinner transactions, not ticket.
Lost dinner transactions, not ticket, drove the gap to last year, worsened by two rainy days and two low reviews on waits.
Single-week swings of 15%+ or well outside a store's recent range

Stores open less than 18 months · since each one opened
Each new location is measured against its own peak opening month. That month shows the location's proven sales capacity, the volume it has already shown it can do. Every new Bluebird Kitchen location sees a lift during its grand-opening period, followed by a normal settling period. The goal is to rebuild back toward that peak. A healthy ramp follows a U-shaped curve: sales settle after the opening lift, stabilize, then climb back toward peak volume as the location builds repeat transactions, catering and digital channels. To show whether a location is ahead of or behind pace, we also compare it with how a typical Bluebird Kitchen new store performs at the same age, based on our 2025 openings (Oakland).
The 2 stores not in comps yet: 0 behind typical, 1 on track, 0 ahead, 1 not rated (under 4 weeks open). Average weekly sales this year: newer stores $36K, comp stores $44K.
What's driving it. Oakland is holding above the typical opening curve on steady dinner transactions and third-party, with catering running ahead of last year; Portland sits just below its norm in week ten as ticket eased and dinner softened.

Percentages are of each store's peak opening month. On track = within 5 points of typical. Venues are not held to the curve, and stores open under 12 weeks are too early to call.

Shares are of each store's net sales; catering and in-store make up the rest. A store counts as moving when third-party fell at least a point while first-party digital rose at least a point. What drove a move (a promo, a menu-price gap, a delivery-zone change) comes from leadership's notes.
